Mediterranean Beef Stir Fry

This Mediterranean stir-fry with ground beef is an ideal quick and nutritious dish. The beef is cooked with ripe tomatoes, sweet bell peppers, spinach, red onion, zucchini and basic seasonings that infuse it with flavor.

Ingredients:
1 lb lean ground beef
1 tablespoon olive oil
1 red bell pepper
1 small zucchini, sliced
1 med red onion, sliced
2 cups baby spinach
1 cup cherry tomatoes, halved
2 cloves garlic, minced
1 teaspoon oregano
1 teaspoon cumin
1 teaspoon paprika
salt and pepper to taste
1 tablespoon fresh lemon juice
fresh parsley, chopped
crumbled feta cheese
Instructions:
Brown the beef: Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart as it cooks (about 5-6 minutes). Drain any excess fat if needed.
Cook the Vegetables: Add the diced red bell pepper, sliced zucchini, and sliced red onion to the skillet. Sauté for about 4-5 minutes, stirring occasionally, until the veggies begin to soften.
Add Garlic and Spices: Stir in the minced garlic, oregano, cumin, paprika, salt and pepper. Cook for another 1-2 minutes until fragrant.
Add Spinach and Tomatoes: Toss in the baby spinach and halved cherry tomatoes. Cook for 2-3 minutes until the spinach wilts and tomatoes start to soften slightly.
Finish with Lemon: Remove from heat and drizzle with fresh lemon juice. Stir everything together to combine.
Garnish and Serve: Sprinkle with chopped parsley and crumbled feta cheese if desired. Serve immediately.
